'The Wesley Mission, Moorooka Central Cook Chill Kitchen produces over 3200 meals per day -- many of those for residents within Wesley Mission Brisbane. When Wesley Missions approached Food Strategy, they had purchased a large, empty industrial building and pre-ordered their preferred catering equipment. Our job was to make it all fit and comply with stringent building, health and HACCP standards to suit a high volume production facility servicing a high risk clientele. The same site was also earmarked to incorporate a commercial laundry facility . The long, narrow shape of the building enabled Food Strategy to design traditional production line flows from goods inwards at one end to finished product out the other and colour coded zones of operation -- with no backwards step permitted in the process to eliminate cross contamination. A separate laundry facility was included but was separated from the kitchen using physical barriers and ventilation / extraction systems designed specifically to eliminate airborne pathogens and contaminants from the laundry to the kitchen. The project included tilting and pump out kettles with tumble chilling and packaging machinery, brat pans, combi steam ovens, blast chilling and freezing, flight style conveyor dishwashing and pot washing facilities, generated and reticulated steam to the laundry and kitchen for sustainable design. In addition to its usual demands, Wesley Mission Brisbane\'s Moorooka Kitchen has won a contract with Queensland Health. The kitchen will be supplying food to hospitals across the state for the next two years. There are 20 products that the kitchen will supply, mostly consisting of frozen pureed products, distributed through the central distribution courier. Foodservice designs by www.foodstrategy.com.au'
